The Inn at Little Washington’s Very Own Bees Inspire Summer Cocktail – The Bee’s Knees

By Adam Rains

Summer usually brings to mind margaritas and whiskey sours, but it is also the time to shake up the happy hour repertoire and take advantage of the season’s fresh produce. For the last 35 years, The Inn at Little Washington’s Patrick O’Connell has been practicing farm-to-table in his exquisite tasting menus. This summer The Inn has created a special cocktail incorporating a variety of ingredients produced on the property.

“The Bee’s Knees,” currently a major hit among diners, is made with honey from The Inn’s very own bees (the inspiration behind the cocktail’s name) and fragrant lavender from the garden. This extremely refreshing cocktail is very easy to create at home and is perfect either poolside or porch-side.

Our Very Own Bees Knees

Made with honey from Little Washington bees, lavender from the garden and Catoctin Creek Watershed Gin from Purceville Virginia

  • 3 oz. Gin (the more herbal the better to bring out the lavender)
  • .5 oz. small squeeze lemon juice
  • 1 oz. honey syrup
  • Pinch of fresh lavender (dried is fine too if fresh is not available!)
  • Honey powder (available on line at www.savoryspiceshop.com – 8 oz. is only $5 and it can be used in everything from tea to baking!)
