PISCOJITO
2 oz. PISCO 100
1 oz. Fresh Squeezed Lime Juice (1 Lime)
1 oz. Simple Syrup
6-8 Fresh Mint Leaves
3 oz. Club Soda/Sparkling Water

Tear mint leaves, add to shaker with lime juice and simple syrup. Muddle ingredients. Add PISCO 100 and 5-6 ice cubes. Shake vigorously. Add club soda or sparkling water (Perrier, San Pellegrino) and combine (do not shake). Pour into tall Collins glass and serve. Lime garnish is optional.

PISCO 100 PURPLE RAIN
1-1/4 oz. PISCO 100
Equal Parts Pineapple Juice and 
Stirrings Wild Blueberry Juice.
Fresh Blueberries.

Fill highball glass with ice. Add liquid ingredients, stir lightly 
and garnish with fresh blueberries.

PISCO 100 MÉNAGE À TROIS
1-1/2 oz. PISCO 100
2 oz. Riesling Wine
1/2 oz. Simple Syrup 
3/4 oz. Lemon/Lime  Juice
8 White Seedless Ripe Grapes

Combine all the liquids in a shaker and shake. Muddle 8 white seedless grapes in an old fashioned glass, add ice and contents of the shaker. Stir lightly and serve. Tip: Make a whole pitcher ahead  of time and store refrigerated. Keep extra grapes handy to refresh the drinks. Muddled grapes tend to be eaten once the drink is consumed.

PISCO 100 SOUTH BEACH LIMANADE
2 oz. PISCO 100
2 oz. Fresh Squeezed Lemon Juice (2 Lemons)
1 oz. Simple Syrup
1/2 oz. Pineapple Juice
1/2 oz. Orange Juice
Club Soda/Sparkling Water

Combine all ingredients (except Club Soda) in a shaker with 5 ice cubes and shake. Pour into tall Collins glass and fill with Club Soda or Sparkling Water (Perrier, San Pellegrino). Combine but do not shake to mix in the Club Soda. Garnish with a lemon slice and serve. This is a great recipe to mix in bulk for easy poolside dispensing from an Infusion Jar – scale quantities proportionately. 


PISCO 100 CHILCANO
1-1/2 oz. PISCO 100
8 Mint Leafs
Dash of Fresh Squeezed Lime Juice
Ginger Ale
Lemon Slice
Dash of Angostura Bitters

In a tall drink or collins glass, hand crush or muddle mint leaves lightly. Add the Pisco, fill the glass half way with cubed ice, add a slice of lemon or lime, dash of fresh squeezed lime juice and a dash of Angostura Bitters. Fill with ginger ale, stirring carefully keeping the mint at the bottom.

PISCO 100 CHOCOLATE MARTINI
1 oz. PISCO 100
1/4 oz. Godiva Dark Liqueur
1/4 oz. Godiva White Liqueur
1/4 oz. Crème de Cacao
Splash Cream

Pre-garnish martini glass with chocolate syrup. Combine ingredients in a shaker filled with ice. Shake and strain into pre-garnished martini glass. Garnish surface of cocktail with a swirl of chocolate syrup.

PISCO 100 SOUR
2-3 oz . PISCO 100
1 oz. Fresh Squeezed Lime Juice
1 oz. Simple Syrup
3/4 oz. Pasteurized Egg Whites
1 drop Angostura Bitters

In a shaker with 5 large ice cubes (not crushed ice), combine liquids, adding egg whites last. DO NOT combine the Angostura Bitters in the mix. Shake vigorously for about 15–20 seconds. Strain into a six ounce glass and garnish with one drop of Angostura Bitters and serve. When available, use Key Limes to make an especially tasty Pisco Sour. 1/2 tea spoon of powdered “Deb El Just Whites” can be used in place of liquid egg whites. 

PISCOPOLITAN
2 oz. PISCO 100
1 oz. Triple Sec
1/2 oz. Fresh Squeezed Lime Juice
1/2 oz. Cranberry Juice

Combine all ingredients with 5 ice cubes and shake lightly. Strain into martini glass and garnish with a lemon peel.
