PISCO 100 SOUR
2-3 oz . PISCO 100
1 oz. Fresh Squeezed Lime Juice
1 oz. Simple Syrup
3/4 oz. Pasteurized Egg Whites
1 drop Angostura Bitters
In a shaker with 5 large ice cubes (not crushed ice), combine liquids, adding egg whites last. DO NOT combine the Angostura Bitters in the mix. Shake vigorously for about 15–20 seconds. Strain into a six ounce glass and garnish with one drop of Angostura Bitters and serve. When available, use Key Limes to make an especially tasty Pisco Sour. 1/2 tea spoon of powdered “Deb El Just Whites” can be used in place of liquid egg whites.
