Founded in 1990 by Andrè Dion and Serge Racine, Unibroue, located in Chambly, Quebec, Canada (approximately 19 miles east of downtown Montréal), is quite possibly the most respected and beloved brewery in North America. And the reason is simple, they make great beer.
Unibroue’s beers are inspired by the great Belgian brewing tradition established during the past two centuries by Trappist monks. Using a short and simple list of ingredients (water, barley malt, wheat malt, wheat, yeast, hops, sugar, fruit, and spices) Unibroue beer is created using the centuries-old traditional bottle-fermentation process. This process, where fresh yeast and pure cane sugar are added just prior to bottling, yields beer that is only partially filtered.
Fermenting the beer in this fashion produces strong, flavorful and effervescent beer, retaining B vitamins and other micronutrients not found in filtered beers—but it takes time. It is precisely because of this unique fermentation method that Unibroue has so many fans and devotees. Unlike pasteurize or filtered beers, Unibroue’s bottle-fermented ales are alive and increase in complexity during aging, much like wine. With proper cool and dark storage conditions, Unibroue’s strong and extra strong ales can have a prolonged shelf life - up to three years.
