INGREDIENTS:

1 1/2 oz. VEEV

1/2 oz. Lemon Juice

1/2 oz. Chamomile Infused Honey

2 oz. Sparkling Wine

Topped with a Lemon Cloud

Garnished with Chamomile Flowers

PREPARATION:

Build in a tin. Pour the VEEV, lemon juice and honey into the tin, shake with ice. Open the tin and pour 2 oz. of sparkling wine, then strain into a coupe glass. Using an isi, top the cocktail with a layer of the lemon cloud (1:1 lemon juice and simple syrup with egg white). Garnish with a few chamomile flowers in the middle. Enjoy!
