INGREDIENTS:

1 1/2 oz. VEEV

3/4 oz. Dolin Blanc.

2 oz. Champagne

1/2 oz. Fresh Lemon Juice

1/2 oz. Honey Syrup

10 Wheat Grass Blades +2 for Garnish

PREPARATION:

Quick muddle of wheat grass, add all other ingredients to tin. Ice, shake, double strain. Top with champagne and garnish with two wheat grass blades.

INSPIRATION:

I tend to wander the produce sections of grocery stores and farmers markets and allow my mood and imagination to direct me. Whilst doing just that and thinking about this cocktail competition, I stumbled upon Wheat Grass, and had a moment of inspiration. To use vegetal and dry ingredients to allow the subtle, complex flavors of Veev to shine. the combination of wheat grass and champagne make this cocktail crisp, clean, and refreshing.
